I found a very interesting article about Dr. Luise Light who is a former nutrition director for the USDA. She has written a book, What to Eat: The Ten Things You Really Need to Know to Eat Well and Be Healthy, in which she describes the “cozy” relationship between the USDA and the food and agricultural industry; cover-ups of important studies connecting nutrition and chronic diseases; how the new 1992 food pyramid is unhealthy; and tips on eating “good” foods to stay healthy.

Dr. Light's book gives an account of the problems in our American food system (pesticides, GMOs, acryl amide, MSG, processed foods, etc.), but also gives ten guidelines for healthy eating. Three of those guidelines include eating a variety of fresh fruits and vegetables; eating whole-grain pasta, rice, breads, and cereals; and eating certified organic foods.

Many of us are realizing what Dr. Light confirms; processed foods and unbalanced diets are causing symptoms of memory loss, loss of balance, depression, sadness, anxiety, low energy, mind freeze, eye strain, generalized aches and pains, abdominal discomfort, headaches, frequent colds and flu, and weight gain. Those symptoms then turn into conditions such as heart disease, obesity, gastrointestinal disorders, high blood pressure, cancer, osteoporosis, asthma, arthritis, etc. Let's wake up and get back to the basics.
